Much credit goes out to my lovely wife for this creation. To make a long story short, she was craving guacamole and she also wanted some bruschetta. Hey, easy enough; let’s just stick the two together!
Started out with the usual suspects. No onion in our guacamole, please.
For the bruschetta portion I diced up some Roma tomatoes and tossed them with olive oil, salt, pepper and Parmesan cheese. Normally I add chopped basil but going with the theme I substituted chopped cilantro.
For the guacamole part I used three small ripe avocados, the juice of two limes, diced cilantro, salt, garlic powder and a dash of cayenne.
For the base I sliced up some French bread, coated both sides in olive oil and grilled the bread on high heat. You need to pay attention to the bread; it grills up pretty fast.
Slather some guacamole onto the grilled French bread and top with the bruschetta mix.
Seriously great stuff!
If you don’t feel like firing up a grill for this you can always toast the bread with the broiler in your oven.

Looks super fresh and amazing! We have something similar to this called Bruschetta, being an Italian family it’s almost a staple part of our BBQs! Will give the avocados a place on future versions too 🙂
