Smoked Sweet Potatoes
Sweet potatoes are cut into bite sized pieces, seasoned with a dry rub and smoked until tender and creamy.

- 2.5 lbs sweet potatoes
- 2 tsp canola oil
- 3 tbsp margarine or butter
- 3/4 cup chicken stock
- Dry Rub
- 1 tbsp salt
- 1 tbsp smoked paprika
- 1 tbsp chili powder
- 1 tbsp turbinado sugar
- 1 tsp black pepper
- 1 tsp chipotle powder
Combine the dry rub ingredients and mix well.
Wash the sweet potatoes and cut into bite sized chunks.
Place the potatoes into a disposable foil pan.
Lightly coat the potato pieces in oil.
Toss the potatoes with the dry rub until well coated on all sides.
Add three tablespoon of margarine to the foil pan.
Set your pellet grill to 250 F.
Place the potatoes into the smoker and cook for one hour.
Add 3/4 cup of chicken stock to the pan, cover tightly with foil and smoke for one hour or until the potatoes are fork tender.
These potatoes are a great side dish to throw on your smoker while you are cooking up a batch of ribs.
You can smoke these potatoes at a different temperature if desired but adjust your cook times accordingly.
