two bone-in thick cut pork chops that I got from Target.\u00a0 Since we are doing the whole quarantine thing these were bought and delivered by a fine young lady.<\/span><\/p>\n<p><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-size: 14pt;\">These chops, from the Good &amp; Gather brand, had already been marinated\/pumped with salt, phosphates and pork stock.\u00a0 While there are cons to using pork that has been pumped with salt and phosphates one thing that it guarantees is that these were going to be juicy as heck when they came off the grill.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">If your chops are not brined by the producer then you will need to brine them yourself.\u00a0 This is the key to making sure the chops do not turn out dry.\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Use the brine recipe below and let the chops brine in the refrigerator for at least 4 hours.<\/span><\/p>\n<p><strong><span style=\"font-size: 14pt;\">Basic Brine Recipe<\/span><\/strong><\/p>\n<ul>\n<li><span style=\"font-size: 14pt;\">2 quarts water<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1\/2 cup salt<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1\/2 cup sugar<\/span><\/li>\n<\/ul>\n<h2><span class=\"ez-toc-section\" id=\"Season_the_Pork_Chops\"><\/span>Season the Pork Chops<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-size: 14pt;\">I seasoned the pork chops with a light dusting of Slap ya Momma which is basically a kicked up salt and pepper blend.\u00a0 You don&#8217;t need to use much salt for seasoning since these chops have already soaked in a salty marinade\/brine.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">If you need a rub recipe for your pork chops then try this one.<\/span><\/p>\n<p><strong><span style=\"font-size: 14pt;\">Basic Pork Rub Recipe<\/span><\/strong><\/p>\n<ul>\n<li><span style=\"font-size: 14pt;\">1 tbls kosher salt<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 tbls black pepper<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 tbls smoked paprika<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 tsp chili powder<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1\/2 tsp chipotle powder<\/span><\/li>\n<\/ul>\n<p><span style=\"font-size: 14pt;\">After the rub had soaked into the chops for about 15 minutes I slathered both sides of the chops with mayonnaise. The <a href=\"https:\/\/bbqdryrubs.com\/ribs-and-mayo-the-next-big-thing\/\">mayo adds another layer of flavor<\/a> and helps create nice grill marks.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-10889\" src=\"https:\/\/bbqdryrubs.com\/gnne\/2021\/02\/Chops-on-the-Grill.jpg\" alt=\"Chops on the Grill\" width=\"807\" height=\"605\" srcset=\"https:\/\/bbqdryrubs.com\/gnne\/2021\/02\/Chops-on-the-Grill.jpg 807w, https:\/\/bbqdryrubs.com\/gnne\/2021\/02\/Chops-on-the-Grill-300x225.jpg 300w, https:\/\/bbqdryrubs.com\/gnne\/2021\/02\/Chops-on-the-Grill-768x576.jpg 768w\" sizes=\"(max-width: 807px) 100vw, 807px\" \/><\/span><\/p>\n<h2><span class=\"ez-toc-section\" id=\"Grill_the_Pork_Chops_to_145F\"><\/span>Grill the Pork Chops to 145F<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><span style=\"font-size: 14pt;\">I put these chops onto the <a href=\"https:\/\/bbqdryrubs.com\/weber-q1200-vs-q2200-what-are-the-differences\/\">Weber Q1200<\/a> which had been preheating on High for 20 minutes.\u00a0 I kept the grill on High for the full cook.\u00a0 The grate temperature was about 500F<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">I grilled the chops for two minutes and then turned them 90 degrees and grilled for another two minutes.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">I was trying to get some pretty cross hatched grill marks. The marks I got after four minutes were okay but not great.\u00a0 Next time I will grill for 3 minutes, turn and grill another 3 minutes.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-10890\" src=\"https:\/\/bbqdryrubs.com\/gnne\/2021\/02\/Chops-after-four-minutes.jpg\" alt=\"Chops after four minutes\" were flipped I let them cook for 10 more minutes.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">After 14 minutes of total grilling time the chops had an internal temperature of 130F which was getting close to the target temperature of 145F.\u00a0 I coated the chops with some Sweet Baby Ray&#8217;s Hot and Spicy barbecue sauce, flipped them over and let them finish cooking.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">I thought these pork chops looked amazing!<\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-10891\" src=\"https:\/\/bbqdryrubs.com\/gnne\/2021\/02\/Final-Char-on-Pork-Chops.jpg\" alt=\"Final Char on Pork Chops\" width=\"605\" height=\"807\" 100vw, 605px\" \/><\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Once the pork chops reached 145F I removed them from the grill and let them rest for about five minutes before slicing.\u00a0 The total cook time was just under 20 minutes.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">I don&#8217;t think that it is important to rest the chops&#8230;I just didn&#8217;t want to burn my fingers!<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">As expected, these grilled thick cut pork chops were incredibly juicy and delicious!\u00a0 They had the perfect combination of sweet and salty with just enough heat to grab your attention.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-10894\" things I would like to change next time I make these is to add some smoke and use a different barbecue sauce.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">I have seen folks using foil pouches filled with wood chips to add smoke on a Weber Q.\u00a0 I have never had much luck with the foil pouch routine so I have purchased a 6 inch smoke tube.\u00a0 The smoke tube gets filled with wood pellets which burn and smolder beneath the cooking grate.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">I got the smoke tube from Amazon and it should be here in a day or two.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">The second thing I would change is the barbecue sauce.\u00a0 Sweet Baby Ray&#8217;s is tasty but loaded with high fructose corn syrup as well as being incredibly unadventurous.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">I bet these chops would be incredible with something like a pineapple jerk sauce or even an Alabama white sauce.
