Evenly coat the beef belly with Morton Tenderquick. Use 1 Tbsp per pound of meat. Put the meat in a Ziploc and into the fridge for 5 days. Flip it once a day.
Put the belly on the smoker at 250F. I use hickory and smoke it until it reaches 150F.It takes about 2-3 hours.When finished, cool it in the fridge before slicing.
