Step 1: Cutting Potatoes
To begin, cut a potato into quarters then cut the quarters in half.
That will get you 8 wedges that are about an inch thick.

Wrap each wedge with a slice of bacon.

Use cheap bacon!
You want bacon that is thin and fatty because it wraps so much easier, and cooks faster, than meaty thick cut bacon.

Step 3: Add Seasoning
Since the bacon is salty, use a low salt rub that has plenty of sugar and heat.
Season all sides liberally.

Good Rub Recipe
If you don't have a go-to rub, try this one:
– 1/2 cup sugar
– 1/4 cup smoked paprika
– 2 tbls chili powder
– 1 tbls black pepper

Step 4: Get Smoking!
I used my Z Grill at 275F with pecan pellets.
After an hour, I raised the temperature to 350F for 20 minutes.
When the bacon is crisp, they're done!
